I'm particularly looking at the bunkers with a removable roof

Does anyone know how much room they have for figures?

Machine gun bunker type 2 is of particular interest but I'm really just interested in ones I can fit a 15mm circular stand within so if either of the tobruk ones work better that would be cool too

As would the pak 40 one

I've had a quick measure and the regular covered bunkers will take a 30mm base easily.  The Tobruk ones are a little tighter and you've got about 40mm x 20mm of space inside those two.

Not a lot unfortunately, definitely not enough to have the figures inside with the roof piece on as well.  Maybe 9-10mm tops space?
